Honestly it took awhile before I really came to appreciate the versatility of tofu. Now it is truly loved by all in our house and I keep trying new ways to use it in place of meat. This healthy soup is something I threw together for lunch one day.
Tofu with Noodles in Broth

Ingredients
- 3 cups chicken or vegetable broth
- Small handful of dry spaghetti broken in 1/2
- 1/2 block of tofu (medium) cut into cubes
- 1 T tomato paste
- 1/4 green onion chopped
- 1 tsp minced ginger (optional)
- salt and pepper to taste
Directions
- Step 1
- Pour broth into medium sauce pan and bring to a boil. Add pasta and boil according to box instructions
- Step 2
- Add tomato paste and stir to dissolve
- Step 3
- Add tofu and ginger and simmer for 2-3 minutes
- Step 4
- Add chopped green onion and salt and pepper and serve
