Woo hoo! It’s done…
It took me an entire year.
But, finally, I have gotten all the permits, passed the tests and filled in all the applications. I have uploaded. I have downloaded. Paid so many fees and have requested far too many approvals but I got my certification and am now able to work out of my very own kitchen with my food manufacturing permit in hand.
It’s almost as if I planned it that way.
Everything seems to have fallen perfectly into place for me to launch Kate’s Truffles in time for the 2023 Holiday season.

I wish I had that vision. Who would have dreamed it would have taken so long to get everything in order?
One whole year.
To be clear, this process may not have taken everyone an entire year but that is how long my journey took.
I am actually very lucky that in Virginia there is the option of certifying your own kitchen as a food manufacturing facility rather than using a community kitchen or finding a food manufacturing plant. I believe it would have been far more troublesome trying to figure out how to bring in a third party to produce my recipe, package and distribute my truffles from someplace else in VA or possibly some other state.
Honestly, maybe it would have been easier because someone else does all the work. I need only supply my grand vision.
And funds up front, of course.
Home processing is easier on the budget and in the end I have total control.
I also have total responsibility for everything, which is no doubt why it took me so darn long.
Now it is done and I passed with flying colors and KatesTruffles is moving forward full speed.

I am so excited to get my awesome truffles in the hands of more than just my friends so I have joined a few craft shows this Holiday season. This Saturday is my very first public Fall Craft Fair.
